* 1 cup crushed red tomatoes
* 1 spoonful chili paste
* salt
Head pan, add oil and chili paste
Bloom for 30-60s, until the air hits your eyes and nose & it feels peppery
Add cup of crushed red tomatos
Simmer until thick & saucy (like marinara)
Taste. Salt. Taste. Salt.
i know, it's tempting to skip this step, but if you don't do the treaste/salt/taste ritual, your food will have either too little or too much salt. and salt is 1/4 of the ingredient list so you have to get it right.
Crack 2 eggs into marinara
Cover with lid
Check on eggs every 3-4 mins
When whites firm, ur done - slide that slopper on top of some rice, or a bagel
